In one of his last in-depth interviews, the late Dr. John McDougall shared his decades of wisdom on how a simple, starch-based diet can transform health, reverse disease, and even help save our environment.
Dr. McDougall, a physician, author, and founder of the renowned McDougall Program, spent over 50 years teaching people how to regain their health by eating the way humans have thrived for thousands of years: on whole, plant-based, starch-centered foods.
In this article, I’ll break down the biggest insights from our powerful conversation.
Why Our Modern Diet is Killing Us
According to Dr. McDougall, the Western diet — rich in animal products, oils, and processed foods — is the root cause of today’s epidemic of chronic diseases.
“The problem,” he said plainly, “is the food.”
For most of human history, thriving civilizations — from Asia to South America to ancient Egypt — built their diets on starches like rice, corn, potatoes, and wheat. Disease was rare.
But as societies became wealthier and shifted to meat, dairy, oils, and refined sugar, rates of obesity, heart disease, diabetes, and even birth defects skyrocketed.
He pointed out how even today, as China adopts a Western-style diet, rates of diabetes and obesity are climbing at alarming rates.
What is the McDougall Diet?
The McDougall Diet is refreshingly simple:
-
90% of your calories come from starches (rice, potatoes, corn, beans, whole grains)
-
Add vegetables and fruits for balance and nutrients
-
Completely eliminate animal products and free oils
“Nobody ever lived on kale or broccoli,” he reminded us. “Humans thrive on starch.”
He explained that the body does not need excess protein or oil to function, and in fact, these often cause harm — increasing risk of kidney disease, cancer, and clogged arteries.
Why High-Protein and High-Oil Diets Are Harmful
Dr. McDougall debunked the myth of high-protein diets being “healthy.”
Excessive protein burdens the kidneys, increases acid load on the bones, and is associated with chronic disease. High-protein diets like Atkins and keto, he said, work by making people so sick they lose their appetite — and they’re unsustainable.
Similarly, he warned about oils:
“Oil is not a food. It’s a processed, concentrated fat. And the fat you eat is the fat you wear.”
Oils, even so-called “healthy” ones like olive or coconut, are highly caloric, promote obesity, and have been shown to accelerate artery disease and cancer development.
Why This Diet Matters for the Planet
Dr. McDougall passionately argued that animal agriculture is a leading cause of greenhouse gas emissions — more damaging than transportation.
“My grandchildren don’t have a chance if we don’t change,” he said. “The planet won’t survive unless we stop eating animals.”
Switching to a starch-based, plant-centered diet is one of the most impactful actions we can take for environmental sustainability.
The Moral Responsibility to Protect Our Children
Perhaps most moving was Dr. McDougall’s plea to protect future generations.
“Civilized people take care of their children,” he said. “But in America, we’re letting them get sick and fat for money.”
He called on us to stand up against industries that profit from our sickness — pharmaceutical companies, meat and dairy industries — and take personal responsibility by choosing better food.
How to Get Started
Here’s how you can start adopting the McDougall way today:
✅ Build your meals around starches like rice, potatoes, beans, corn, and whole grains
✅ Fill your plate with colorful vegetables and fruits
🚫 Cut out all animal products: meat, dairy, eggs
🚫 Eliminate free oils: olive, canola, coconut, etc.
☀️ Get sunshine, move your body, and drink plenty of water
As Dr. McDougall said:
“The body heals itself when you stop hurting it.”

Final Thoughts
This conversation reminded me how simple good health really is — and how powerful our choices are. A plate of potatoes or rice isn’t just food — it’s medicine, it’s sustainability, and it’s hope for our children and the earth.
